Corn Pancakes with Smoked Salmon
Ingredients:
½ cup sour cream
1 T. fresh chives, chopped
1 ear sweet corn, shucked into bowl.
1/3 cup AP flour
2 T. fine yellow cornmeal
½ cup milk
1 egg, separated
¼ t. salt
¼ t. ground black pepper
1 T. vegetable oil
4 oz. cold smoked salmon
Snipped fresh chives
Method:
- Combine sour cream & chives in a bowl.
- Mix together flour & cornmeal.
- Combine egg yolk & milk until blended in a separate bowl. Add to flour.
- Stir in corn, salt, pepper.
- Beat egg white until soft peaks form. Gently fold into corn mixture.
- In a large skillet on med heat, spread small rounds of batter to make pancakes 2” in diameter.
- Transfer to serving plates when done and top w/ strip of salmon & sour cream. Serve.
