Queso Fundido

Ingredients:
1 T. unsalted butter
1 T. AP flour
1 cup whole milk
12 oz. Jack cheese, grated
¼ t. salt &1/8 t. ground pepper
2 T. chopped fresh cilantro
8 oz. goat cheese, sliced
Roasted Poblano Sauce
Blue or White corn tortilla chips
Methods:
- Preheat broiler. Melt butter in saucepan over med heat. Add flour and cook for 1 minute.
- Whisk in milk and cook until slightly thickened.
- Remove from heat and stir in grated Jack cheese and season w/ salt and pepper.
- Scrape mixture into an 8-inch cast iron pan and place slices of goat cheese over the top.
- Place pan under the broiler and broil until goat cheese is golden brown on top.
- Remove from oven and drizzle with poblano vinaigrette and sprinkle with chopped cilantro. Serve with chips.
