Queso Fundido

Ingredients:

1 T. unsalted butter
1 T. AP flour
1 cup whole milk
12 oz. Jack cheese, grated
¼ t. salt &1/8 t. ground pepper
2 T. chopped fresh cilantro
8 oz. goat cheese, sliced
Roasted Poblano Sauce
Blue or White corn tortilla chips

Methods:

  1. Preheat broiler. Melt butter in saucepan over med heat. Add flour and cook for 1 minute.
  2. Whisk in milk and cook until slightly thickened.
  3. Remove from heat and stir in grated Jack cheese and season w/ salt and pepper.
  4. Scrape mixture into an 8-inch cast iron pan and place slices of goat cheese over the top.
  5. Place pan under the  broiler and broil until goat cheese is golden brown on top.
  6. Remove from oven and drizzle with poblano vinaigrette and sprinkle with chopped cilantro. Serve with chips.
