Chicken Chettinad
Ingredients:
2 lbs. Chicken breast, diced
2 large onions, finely sliced
2 tomatoes, chopped
2 t. ginger, 2t. garlic paste
2 sprigs curry leaves
½ cup grated coconut
Spices: 1 t. white poppy seeds, 1 t. coriander seeds, 1 t. cumin seeds, 1 t. fennel seeds, 3 dry chillies, 1” cinnamon stick, 2 cardamom pods, 3 cloves, 1 t. chili powder, 1 star anise, 2 t. lime juice, salt to taste
Method:
- Roast whole spices along with 1 sliced onion and coconut until browned. Grind into paste.
- Heat oil w/ curry leaves. Add other onion & fry until browned.
- Add spice paste & star anise.
- Fry 2-3 minutes. Add tomatoes & chili powder, then chicken.
- Cook for 15-20 min. Mix lime juice at end.
