Pan-Seared Mahi Mahi w/ Sauteed Tomatoes & Garlic Spinach

Ingredients:

1 lb. mahi mahi filets
1 + 1 T. olive oil
2T. garlic mojo (roasted)
Texas chili Rub
Salt & Pepper to taste
1 lb. fresh spinach sautéed in garlic
1 lb. cherry tomatoes
1 shallot & 1 clove garlic minced
Fresh herbs, salt, pepper

Method:

  1. Lightly sprinkle fish w/ salt & pepper.  Saute fish in EVOO in a saucepan over med-high heat.  Season with Texas chili rub.  As fish is cooked, turn flame off and paint garlic mojo on fish. Keep in oven to keep warm.
  2. Put olive oil in saucepan and heat until warm.  Add shallot & minced garlic.  Add cherry tomatoes and lightly sauté until tomato skin is wrinkled.  Add fresh herbs, salt, and pepper.  Top fish w/ tomatoes & serve on bed of sautéed garlic spinach.
