Black Bean Soup

Ingredients:
3 cans black beans w/ liquid
½ cup bratwurst/sausage, chopped
12 oz. Beer
½ cup water
1 cup onions, diced
½ cup green bell pepper, diced
Spices: 1 T. dry sherry, 2 T. minced garlic, ½ t. ground cumin, ½ t. ground coriander, 1 t. cayenne, 2 t. Tabasco sauce, Adobo seasoning/salt/pepper to taste
Method:
- Sauté peppers, onion, garlic. Add sausage/brat and stir fry for 2-3 minutes.
- Add beer and Tabasco sauce, then bring to boil.
- Add 2 cans of beans and boil 4-5 minutes.
- Using hand held kitchen blender, puree until soup is smooth. Add remaining can of beans.
- Stir in spices, then serve w/ sour cream, cheese, chopped scallions/cilantro.
