Egg Drop Soup
Ingredients:
5 cups chicken stock
½ lb diced chicken
4 green onions, sliced
2 eggs, beaten + 1T. flour
1T. cornstarch slurry
Seasoning: 3T. rice wine, 1T. soy sauce, ½ t. sugar
Method:
- Combine chicken stock w/ seasonings and bring to boil. Simmer for 3 minutes.
- Add chicken and green onions.
- Simmer for 3 min. Add cornstarch slurry.
- Swirl in egg/flour into boiling soup, stirring constantly .
- Swirl in chili oil into soup to garnish.
