French Onion Soup

Ingredients:
¾ cup gruyere cheese
¼ t. sugar
4 onions & shallots, sliced
8 cups beef stock
4 leeks, thinly sliced
½ cup white wine
2 minced garlic cloves
12 slices baguette
2 sprigs green onions, sliced
Spices: salt & pepper to taste, ¼ t. dried thyme, 1 bay leaf, ½ t. paprika, ¼ t. cayenne pepper
Method:
- Heat oil on medium heat, then sauté onions until soft.
- Add sugar and leeks stirring until carmelized, usually 35-45 min.
- Add garlic & sauté for 1 minute.
- Mix beef stock, wine, spices.
- On baking sheet place bread w/ cheese.
- Broil for 3-4 min. & place on top of soup.
