Spicy Tomato Basil Soup

Ingredients:

1 T. Butter
1 onion, chopped
1 carrot, chopped
2 T. flour
2 cups chicken broth
1 can crushed tomatoes + ½ t. baking soda
Spices: 1 T. tomato paste, 1 t. basil, ½ t. dried thyme, salt/pepper , 2 T giardeniera peppers

Method:

  1. Melt butter in saucepan. Sauté onions & carrots for 3-5 min.
  2. Add flour & stir 1-2 minutes.
  3. Add rest of ingredients and simmer on low heat for 15 minutes.
  4. Add giardeniera peppers.
  5. Puree soup in blender until smooth.
  6. Return to pan and season w/ salt/pepper.
  7. Serve w/ parmesan toast or garlic bread.
