Tortilla Soup
From: Williams-Sonoma
Ingredients:
1 onion, chopped
2 cloves garlic, minced
¼ cup cilantro
1 can tomatoes
1 t. ground cumin, coriander
4 cups chicken broth
4 oz. can diced green chiles
1 chicken breast, diced
Salt, Pepper, Habanero powder to taste
½ t. ancho chile powder
1 avocado, sliced
2 t. fresh lime juice
Method:
- Heat onions, garlic, cilantro in pan.
- Blend w/ tomatoes in blender.
- Reheat in pan and sauté w/ cumin/coriander
- Simmer soup w/ chicken & green chiles until thickened.
- Add ancho powder, salt, pepper, habanero powder to taste. Remove from heat.
- Serve w/ sour cream, cheese, avocado, fried tortilla strips.
